In a vessel, boil water sufficient for 1 cup noodles. Add ½ tbsp salt, 1 tbsp oil and 1 cup noodles and let it boil till the noodles become soft. Once done, strain the noodles and mix it with Corn Flour
In a pan of oil, put in the noodles and fry until golden brown and crispy. Keep aside.
In a vessel heat 2 tbsp oil. To it add 8-10 garlic cloves, 3 – 4 green chilies and saute for a minute. Add ½ cup capsicum, ½ cup cabbage, ½ cup carrot, ½ cup onions and saute again till cooked well.
To this mixture add 1 tbsp ginger garlic paste and 1 tbsp salt (as per taste) along with 2 glass of water. Add 1 tbsp pepper, ½ tbsp sugar and 1 tbsp red chili powder and bring the gravy to boil.
To the boiled mixture add 2 tbsp green chili sauce, 3 tbsp tomato sauce. Mix well and bring to boil again! Do a taste test! Add salt as pepper as per taste.
In a separate bowl, mix 2 tbsp corn flour with 2-3 tbsp of water.
To the gravy add 1 tbsp soy sauce and add the corn flour water mixture. Mix well. Simmer until gravy is semi thick. Sprinkle coriander on top and mix well. Do a taste test again!
In a small pan, heat 1 tbsp oil for the omelet. Break 1 egg and cook. Sprinkle pepper and salt as per taste.
It’s time to bring it all together!
In a serving bowl add the gravy and top it off with coriander, fried noodles (add to your hearts content) and the delicious cooked egg.
Serve hot and eat hot!
